All restaurants with 51% of revenue from the sale of food will be required to have a minimum of 1 person in charge that holds the Illinois Allergen Awareness Certificate. All High-Risk restaurant employees with the FSSMC (Food Service Sanitation Manager Certificate) will be required to have the Illinois Allergen Awareness Certificate.
